Apricots which can be found in grocery stores world-wide as dried fruits provide carbohydrates, dietary fiber, Vitamins A and C, plus minerals, calcium and iron. They are rich with healthy nutrients, and delicious as a smoothie! It’s easy to enjoy this Apricot-banana Smoothie for desert or an afternoon snack.
It is also easy to turn this apricot-banana smoothie recipe into a nutritional blast simply by adding a tablespoon of Chia seed. Chia is loaded with a ton of nutritional goodness including cholesterol fighting, heart healthy omega-3 fatty acids. Chia also has no taste of its own so adding it to the recipe won’t change the results a bit.
In your favorite blender mix:
- 1 handful of dried apricots
- 1 handful of raspberries
- 1 whole banana (if you freeze it first, don’t forget to peel and slice it)
- 1 scoop vanilla ice cream (or low-fat frozen vanilla yogurt)
This one is really easy! Put all the ingredients in the blender, and mix until smooth-about 30-45 seconds. The banana will help thicken the texture of the smoothie so you’ll be less likely to end up with blended juice. And, if you prefer the smoothie slightly thicker, just add a little more vanilla ice cream or frozen yogurt.
