I think that Apricots are often overlooked, probably because of their pretty short growing season. If you haven’t thought about them lately you probably should. Not only are they rich in beta-carotene and vitamin C, Apricots are very high in fiber and are really low in saturated fat. As an additional bonus, Apricots have -0- cholesterol. Combined with Strawberries in this Apricot Strawberry smoothie, they really come into their own. Try this one soon.

Its also easy to turn this Apricot Strawberry smoothie treat into even more of a nutrition powerhouse just by adding a tablespoon of Chia seed. Chia is a natural seed that adds a large measure of nutrition including heart healthy, cholesterol fighting omega 3 fatty acids and antioxidants. Even better, unlike Flax, Chia doesn’t have a taste of its own so adding it here won’t change the delicious results.

In your favorite blender mix:

4 medium Apricots, pitted
1 medium Apple, seeded and peeled
1 cup Strawberries
handful of baby Spinach
1 medium carrot, peeled and sliced
1 Tbsp. Chia seed
1 cup filtered water
