If there were to be a contest for the worst sounding smoothie I think I would nominate this one. There is just something very off-putting about a banana spinach smoothie isn’t there?
But that was before I mustered up enough courage to actually give it a try. To say I was surprised understates it. I really liked it! So much so that I have now tried it twice, once with water and once with almond milk. Both tasted great and made me feel very virtuous for eating something so healthy.
Even better, the recipe could not be easier:
- 4 cups raw baby spinach
- 6-8 ounces vanilla yogurt (I haven’t tried it with Greek yogurt but it should be good)
- 1 large banana, peeled and sliced
- 8 oz. or so water, or Almond milk
All the ingredients go into your trusty blender and mix until smooth. You might want to try a bit less water or Almond milk to start and add more if the blend is too thick.
This made two really big smoothies so adjust if it’s just you for breakfast.
