There are a lot of different types of Beets. Chard, Spinach beets, Sugar beets, something called “mangelwurzel” and the purple garden beet which is the heart of this Beet and Mixed Berry Smoothie. This recipe is tasty beyond what you will expect and works well in a smoothie diet too.
The Chia seed is optional but recommended. Chia is an interesting plant with a long history of being used as a food. Ounce for ounce, Chia has more important omega-3 fatty acids than does salmon. Chia is also gluten free and has only a trace amount of sodium. Best of all, Chia seed have no taste of their own so adding them to this recipe won’t change the results even a little bit.
- ½ cup diced beets (you can roast them first if you want)
- 1 cup mixed berries (fresh or frozen)
- 2 tbsp. Granola
- ½ cup plain Greek yogurt
- ½ cup orange juice (frozen OK, but fresh is better)
- 1 tsp. Honey
- Ice to taste
