I must confess that I have something of a love – hate relationship with Pinterest. I really enjoy wandering around looking for stuff but I also get really annoyed at how many pins get shared so many times. Still, it was during my Pinterest explorations that I ran across this Vanilla Almond Smoothie recipe. It is finds like this that make it all worthwhile.
The recipe was put up by a Yuriel Kaim and is different from most smoothie recipes. This one is both vegan and is also gluten free. I haven’t had a chance to try it for myself yet but, judging from the ingredients list, it looks like a good bet to be really good.
I also learned something: I had never run across “MCT oil” before. It turns out that MCT stands for “medium chain triglycerides”. The benefits of MCT oil are reportedly being easier to digest and a good source of energy among others. Try this link for more info.
His Vegan, Gluten free Vanilla Almond smoothie is:
1 cup cauliflower
2 tbsp almond butter
1 tbsp stevia
1 cup almond milk
1 t sp vanilla
1 scoop protein powder
1 tbsp Mct oil.
With a powerful enough blender add everything in at once and blend until smooth. If your blender is a bit under powered put the cauliflower in first and add the rest a bit at a time.
