Somewhere along the line celery became a snack food for dieters. Although it shines in that role, it has a lot more to offer. Nutritionally, it provides vitamins B1, B6, C, dietary fiber, folic acid, and potassium.

Here is a vegetable smoothie recipe that showcases celery in a great way. This afternoon treat yourself to a real energy blast by blending tomatoes, carrot juice and onions for a delicious Mixed Vegetable Smoothie blend!

In your smoothie blender mix:

– 4 stalks of celery (without the leaves)
– 4 scallions
– 2 fresh tomatoes, sliced
– ½ cup of V-8 juice
– 2 Tbsp. lemon or lime juice
– 1 tsp Chia seed

Mix together and top with a sprig of parsley. Adding a teaspoon of chia seed powder is the perfect way to get more omega-3 fatty acids in your diet. And, if you want to add a “bit of a kick,” add a little horseradish or Tabasco!
