When my parents were young, coffee was pretty much used only in the mornings as an aid to wake up and get going. Since those bygone days, coffee is now a flavor for ice cream, candy, and all sorts of cold drinks that are useful anytime of day or night. This coffee smoothie recipe is a great example of using coffee as a pick me up sort of treat.
Its also easy to turn this coffee smoothie treat into a nutrition powerhouse just by adding a tablespoon of Chia seed. Chia is a natural seed that adds a large measure of nutrition including heart healthy, cholesterol fighting omega 3 fatty acids and antioxidants. Even better, unlike Flax, Chia doesn’t have a taste of its own so adding it here won’t change the delicious results.
In your favorite blender mix:
1 cup brewed coffee, cold
1 cup soy milk
2 tbsp. instant vanilla pudding mix
1/2 frozen banana, (peeled and sliced before freezing)
Sweetener to taste
Ice to taste
1 Tbsp. Chia seed
