The lemon has has been around for so long that where they came from is something of a mystery. What we do know is that lemons are both healthy and tasty and every part of the fruit can be used. Of course lemon juice is used for lemonade as well as types of soft drinks and even cocktails. The lemon rind is an ingredient in marmalade and lemon flavored liqueurs as well as garnish. Lemon Zest is used as a flavor additive in baking and some other dishes. Nutritionally, the lemon is very rich in vitamin C and also provides dietary fiber, iron, and protein. In this lemon ginger smoothie, the whole lemon is used with the exceptions of the peel and the seeds.

Ginger comes from the same family as cardamom and makes as very hot spice. Ginger is also used to make ginger tea and candies. Indian recipes frequently call for the juice of the ginger root as a spice. In the U.S. and other western countries ginger is more frequently found in products such as gingerbread and ginger ale. Nutritionally, ginger has zerp cholesterol, few calories, and is a good source of carbohydrates and dietary fiber.

Its also easy to turn this lemon ginger smoothie treat into a nutrition powerhouse just by adding a tablespoon of Chia seed. Chia is a natural seed that adds a large measure of nutrition including heart healthy, cholesterol fighting omega 3 fatty acids and antioxidants. Even better, unlike Flax, Chia doesn’t have a noticeable taste of its own so adding it here won’t change the delicious results.

In your favorite blender mix:

  • 1 whole lemon, deseeded and peeled
  • Peeled and crushed ginger root (about 2-2/1/2 inches long)
  • 1 apple, cored, sliced, and peeled
  • 1 Tbsp. Chia seed
  • 3/4 cup filtered water
  • Ice to taste
