The weather is often just too hot to be eating heavy during the summer months. Many choose to eat a lot more salads instead of heavier foods. A Garden salad is one that is made primarily from vegetables with a bed of green. It is also the basis for some very low calorie smoothies.
This particular smoothie recipe is named for the garden salad because it uses three different vegetables and a handful of greens. It also includes two different juices for a more complex flavor.
Optionally you can include a tablespoon of Chia seed as well. Chia has no flavor of its own and will not interfere with the end results. Chia will also add a wide range of additional nutrition including omega-3 fatty acids which are important for a healthy heart.
Here is a tip: before building your garden salad smoothie cut up the tomatoes, carrots and celery as fine as you can. The finer the cuts, the smoother consistency you will end up with. On the other hand, if you don’t mind a bit of lumpiness then this isn’t an issue.
Then, in your favorite blender mix:
Handful of kale leaves
2 cups tomatoes
1.2 cup tomatoe juice
1/4 cup apple juice
1/2 cup carrots
1/4 cup celery
1-2 cups of ice (more or less according to taste)
(optional) 1 tbsp. Chia seed
