One of my favorite vegetables is what I call that “wonderful white carrot,” but actually is a parsnip. They have such a unique flavor and mixed with apples-I just love this parsnip apple smoothie for lunch!
- -1 cup of cold apple juice
- -1 large red delicious apple (or apple of your choice), chopped and cored
- -2 medium parsnips cut in small chunks**
- -1 Tbsp. honey
- -Ice to taste
**It is best to slightly cook the parsnip, just like you would carrots–simply scrub the outside and place in a pan with a little water, steaming until soft. You can do this and just store in the refrigerator in a zip lock until you are ready to use.)
Everything goes into your blender at the same time. Mix until smooth and enjoy!
