This Beet & Berry smoothie mix is something different. Beets are not everyone’s favorite but in this smoothie, they taste great.  Originally found on Diet Dessert ‘n Dogs

1 medium raw beet,  peeled and cut in chunks
1 cup mixed fresh or frozen berries such as blackberries, blueberries, raspberries or strawberries
3 large or 4 medium kale leaves
1/2 medium cucumber, peeled and cut in chunks
1/2 lime
1 scoop of your favorite plain or vanilla protein powder
1 cup  plain or vanilla rice milk
stevia (or similar) sweetener to taste

Place all ingredients in a high powered blender and blend until smooth.  Use a couple of ice cubes for a colder smoothie. Drink immediately.  Makes 1 large serving.
