Are you familiar with Butternut Squash? Despite a name that, to me at least, isn’t the most appetizing butternut squash is actually pretty good and makes for a unique and tasty smoothie.
Try a Butternut Smoothie for a light lunch.
The first step is to roast a butternut or acorn squash. This recipe will use approximately 1 cup squash meat:
– 1 cup 2%, evaporated or soy milk (or regular, it is your call)
– ½ tsp each of ginger, allspice and cinnamon
– 1 Tbsp honey
Blend until smooth and serve in a tall glass. I’m pretty confident you are going to like it.
Here’s a hint….for a nice cold smoothie, keep the squash meet refrigerated until you mix with cold milk! A delicious, lunch treat during the fall when squash is available in our grocery stores and farmer’s markets.
