Coconut and Pear Smoothie

Pears are a pretty neat fruit. They have been around for almost as long as we have but, instead of being tropical, the earliest evidence of pears as food is from the Celts and Slovak languages. They are even mentioned in the “Odyssey”. Today we recognize them as a good source of dietary fiber and vitamin C. We also recognize them as tasting great and mixing well in smoothies and this coconut and pear smoothie shows that very well.

Coconut are pretty high in saturated fat but pretty low in calories. If I was on a strict diet I probably wouldn’t include coconut but, since I’m not, I don’t feel guilty if I enjoy it every now and then.

The baby spinach can seem out of place here but, if you try this mix, you’ll see why it was added.

Try this coconut and pear smoothie recipe for a tasty hint of the tropics type treat:

In your favorite blender mix:

– 2 pears, cored, seeded and cut in chunks
– 1 cup of coconut yogurt
– 1 cup of fresh baby spinach
– 1 Tablespoon Chia seed
– 6-8 ice cubes,or 1 cup of crushed ice

And if you have any coconut flakes in your pantry to add-this is the perfect recipe to bring them out! You can add 1/4 cup to your smoothie or just use them for garnish. Toasted coconut flakes add more coconut taste to the smoothie so, if you are a coconut fan, its a perfect addtion to the basic recipe!
