Pears are a pretty neat fruit. They have been around for almost as long as we have but, instead of being tropical, the earliest evidence of pears as food is from the Celts and Slovak languages. They are even mentioned in the “Odyssey”. Today we recognize them as a good source of dietary fiber and vitamin C. We also recognize them as tasting great and mixing well in smoothies and this coconut and pear smoothie shows that very well.
Coconut are pretty high in saturated fat but pretty low in calories. If I was on a strict diet I probably wouldn’t include coconut but, since I’m not, I don’t feel guilty if I enjoy it every now and then.
The baby spinach can seem out of place here but, if you try this mix, you’ll see why it was added.
