It isn’t any secret that smoothies offer the opportunity to mix often very different ingredients with great results and this cucumber blueberry smoothie mix is great proof of that.

While blueberries are a very popular smoothie ingredient, cucumbers are clearly most often used in summer salads and, sometimes, in smoothies favored by vegetarians. And that is a shame!

The cucumber is closely related to both the muskmelon and the squash and offers a delicate flavor along with a load of nutritional goodness. Cucumbers are loaded with Calcium, Magnesium, Phosphorus, and Potassium. 

This recipe pairs cucumbers with blueberries in a cucumber blueberry smoothie that works well as a healthy breakfast or lunch.

In your favorite blender mix:

  • 1 cup fresh or frozen blueberries
  • 1 cucumber, both seeded and peeled. Cut into small pieces
  • 1/2 cup plain, low fat yogurt
  • 1 cup pear juice or white grape juice
  • 1 Tbsp.Chia Seed
