The Pina Colada just turned 58. Most histories credit the Caribe Hilton Beachcomber Bar in San Juan with introducing this delicious tropical treat in 1954. But others insist that this wonderful mix of pineapple and rum can be traced back to the early 1800s.
Whatever the truth, the Pina Colada is a tasty tropical treat and a flavor that blends well in a smoothie even without the rum.
Here’s a smoothie mix that reproduces the taste of the drink in a smoothie that works really well as a dessert.
– 1/4 cup of coconut milk
– 2 cups of cold pineapple juice
– 2 cups of frozen pineapple chunks
– 1 cup of frozen banana chunks
– 1/2 cup of coconut or vanilla ice cream, frozen yogurt or sorbet
Top with pineapple, toasted coconut or both!
