A pumpkin smoothie makes a great treat out of a popular vegetable. Pumpkins are a very interesting vegetable. They are an important part of the culture twice a year (Halloween and Thanksgiving). Native to North America, Pumpkins are also the focus of a large number of festivals and competitions for the largest grown (for the record, the largest ever weighed in at 2,009 pounds and was grown in the state of Rhode Island in 2012). There are even “pumpkin chucking” contests where teams build devices to throw a pumpkin as far as possible.

Its also easy to turn this Pumpkin smoothie treat into a nutrition powerhouse just by adding a tablespoon of Chia seed. Chia is a natural seed that adds a large measure of nutrition including heart healthy, cholesterol fighting omega 3 fatty acids and antioxidants. Even better, unlike Flax, Chia doesn’t have a taste of its own so adding it here won’t change the delicious results.

In your favorite blender mix:

– 1 cup of vanilla yogurt (or you can substitute with ½ cup yogurt and ½ cup low fat, soy or evaporated milk)
– ½ cup of pumpkin
– ¼ tsp of cinnamon, 1/8 tsp nutmeg 1/8 tsp cloves, (or substitute all three spices with ½  tsp pumpkin pie spice)
– 1 TBSP brown sugar
-1 TBSP. Chia seed

Blend till smooth.  If the smoothie is too thick, add 2 or 3 ice cubes till it reaches your desired consistency.  If you are serving for desert, you can substitute frozen vanilla yogurt or ice cream and top with a whipping cream swirl sprinkled with ground cinnamon or ground nutmeg on top!  This is also a smoothie where you can add a banana for a delicious blended flavor.
